First of all, today I must thank the good folks over at Green Giant for sending me an enormous amount of corn. This will see me through the remaining 69 days of this challenge and beyond. Ho ho ho!
I’ve been on a curry kick this week, but that’s more out of necessity than anything else. I’ve been preparing a lot of curry dishes for other things and have wound up with lots of leftover sauces and spices. So today I simply mixed corn into a basic Japanese curry that already contained cauliflower, chick peas, carrots, shallots, and chicken. I served it with plain rice, pickled mustard greens, and sambal oelek. It was filling and wholesome – pure comfort food.
