#Cornography Day 39: Dried Octopus and Corn Scramble

image

In Japan (and Hawaii, and presumably other places) you can get these dried, smoked octopus snacks best described as octopus jerky. They are meaty, sweet, and delicious, especially tasty with beer. I roughly chopped a handful of them and sautéed them in olive oil until slightly browned, then added corn. I cracked in two eggs and seasoned them with paprika. I dressed it with some leftover lime-tarragon mayo and more paprika. It didn’t look like much, but it was delicious, with a wonderful chew from the octopus. The kind of breakfast that will see you through till dinner.
