My wife Laura makes a mean bowl of pasta. It’s never exactly the same, but it is always delicious, and I think it’s gotten consistently better over time. Yesterday’s version included many of the usual suspects including mushrooms, aubergine, onion, bacon (or ham?) chilli, and tinned tomatoes. It was topped with very good parmesan and fresh torn basil and (for me) some corn. It was sweet and savory and saucy, with just enough spice to keep things interesting even as I approached satiety. The corn didn’t add much, but it didn’t take away, either. It was most satisfactory, as always.
