I’ve been out in the evenings a lot lately, which means Laura has been cooking more. I have always been a great admirer of her stir-fries, which always have a lot of texture and spot-on seasoning. They are also extremely tasty eaten cold the day after, transformed into a sort of noodle salad. Today I mixed the stir-fry with corn and a little mentaiko mayo. It was light yet filling.
